The Conversions You Need Memorized
Almost every doubling headache is solved by these six equivalencies:

With those in hand, any awkward doubled amount can be simplified. Doubling ⅜ cup gives ¾ cup. Doubling 1½ teaspoons gives 1 tablespoon. Doubling 5 tablespoons gives 10 tablespoons — which is ½ cup plus 2 tablespoons, far easier to measure than counting ten scoops.

The pattern to notice: doubling usually makes fractions simpler, not harder. Thirds become two-thirds, eighths become quarters. It’s the opposite of halving, where everything gets uglier.
Step 2: Switch to Grams When Volume Gets Silly
Some doubled amounts have no clean volume equivalent. Doubling 1⅓ cups gives 2⅔ cups — measurable, but three separate scoops with three chances to over-pack. Doubling ⅝ teaspoon gives 1¼ teaspoons, which most spoon sets can’t hit accurately.

Rule of thumb: if a doubled measurement requires more than two scoops of the same cup, weigh it instead.
How Do You Double 1½ Eggs or an Odd Egg Count?
Eggs are the one ingredient that resists doubling cleanly when the original recipe uses odd numbers or halves.
- Recipe calls for 3 eggs → doubled = 6. No problem.
- Recipe calls for 1½ eggs → doubled = 3. Also no problem, and easier than the original.
- Recipe calls for 2 eggs + 1 yolk → doubled = 4 eggs + 2 yolks. Straightforward, just don’t forget the yolks.
- Recipe calls for “1 egg, beaten, half reserved for wash” → weigh it. A large egg is about 50 g out of the shell; measure by weight rather than guessing.
If you ever need a fraction of an egg, beat one whole egg and weigh out the proportion: 25 g is half, 33 g is two-thirds.
Step 3: The Ingredients That Should Not Be Doubled
Converting measurements correctly still won’t save a dish if you double the wrong things. These scale at roughly 1.5x, not 2x:
- Salt — taste and adjust at the end rather than committing up front
- Chili flakes, cayenne, black pepper — heat compounds in larger volumes
- Baking soda and baking powder — over-leavened batter rises then collapses; 1.75x is a safer ceiling
- Yeast — 1.5x ferments a doubled dough on nearly the same timeline
- Vanilla and other extracts — concentrated flavors get harsh quickly
- Wine, spirits, vinegar — larger volumes evaporate proportionally less
Everything else — flour, sugar, dairy, stock, meat, vegetables, garlic, fresh herbs — takes the full 2x without complaint.
Step 4: Re-Check Equipment Before You Start
A doubled recipe needs roughly double the space, and converted measurements are useless if the batter overflows.
- Baking: doubling an 8×8-inch pan (64 sq in) means you need about 128 sq in — a 9×13 (117 sq in) is close enough for most bakes, or use two 8×8s for identical timing. Our Baking Pan Converter does the area math and suggests equivalents.
- Stovetop: keep the pot at two-thirds full or less after doubling.
- Mixing bowls: doubled batter needs a bowl with headroom, not a bowl that’s technically large enough.
Does Cooking Time Double Too?
No — and this is the mistake that ruins the most doubled dinners.
- Two identical pans in one oven: same time, rotate halfway through
- One deeper pan: add 15–30% and drop the temperature by 25°F (15°C)
- Soups and braises: same simmer time, just longer to come up to heat
- Two roasts: timing follows the size of each piece, not the combined weight
Rely on internal temperature and doneness cues instead of the clock whenever you’ve changed vessel depth.
