At higher altitudes, water boils at lower temperatures. Most recipes need 5—25% more time. Baked goods may also need adjusted leavening and liquid.

Why Cooking Times Change

High Altitude Cooking

At elevations above 3,000 feet, water boils at a lower temperature (about 1°F less for every 500 feet). This means:

  • Roasting & braising — Add 2—4 minutes per 30 minutes of cook time per 1,000 ft.
  • Baking — Increase oven temperature by 15—25°F; reduce baking time slightly for cookies and quick breads.
  • Boiling — Pasta, rice, and boiled eggs will take longer at high altitude.

Method Conversion

Converting from oven to slow cooker? Slow cooker (Low) ≈ 8 hours = oven 1.5—2 hours. Air fryers cook roughly 20—30% faster than conventional ovens. Pressure cookers reduce time by 60—70%.

Meat Safety

Always use a meat thermometer. The USDA recommends minimum internal temperatures: poultry 165°F, ground meats 160°F, beef/pork/lamb 145°F with a 3-minute rest.
