Use a digital scale

Sourdough is all about ratios. A scale is essential — volume measurements are too inconsistent for reliable results.

Feed before baking

Use starter at its peak (when it's doubled and bubbly). Feed it 1:2:2 about 4-6 hours before you plan to mix dough.

Autolyse first

Mix flour and water, let rest 20-60 minutes before adding salt and starter. This develops gluten with less kneading.

Watch the dough, not the clock

Rising times vary with temperature. Let the dough double (or reach 50% increase) regardless of how long it takes.
