Why 4 to 6 Is the Trickiest Scale-Up
Doubling a recipe is easy — everything is × 2 and the fractions stay clean. Halving is almost as simple. But scaling a recipe from 4 to 6 servings means multiplying by 1.5, and that’s exactly the factor that produces measurements no one wants to deal with: 1.5 eggs, ⅜ teaspoon, 1⅛ cups.

Step 1: The Base Math — Multiply Everything by 1.5
The scaling factor is simply new servings ÷ old servings: 6 ÷ 4 = 1.5. Here’s a reference table for the measurements you’ll hit most often:

Two conversions worth memorizing, because they solve most 1.5x headaches: 3 teaspoons = 1 tablespoon and 16 tablespoons = 1 cup. Any awkward fraction of a cup can be expressed in tablespoons, and any awkward fraction of a tablespoon in teaspoons.
How Do You Handle 1.5 Eggs?
This is the single most-asked question about scaling from 4 to 6, and there are three legitimate answers.
Option 1 — Weigh it (most accurate). A large egg is about 50 g without the shell: roughly 30 g white, 20 g yolk. Crack two eggs into a bowl, beat them thoroughly, then weigh out 75 g. That’s your 1.5 eggs, precisely.
Option 2 — Split by component. Use 1 whole egg + 1 yolk for richer results (custards, brownies, enriched dough), or 1 whole egg + 1 white for lighter, more structural results (sponges, meringue-adjacent bakes). This is the pastry chef’s shortcut.
Option 3 — Round up and compensate. Use 2 whole eggs and reduce another liquid by about 2 tablespoons. Perfectly acceptable for pancakes, muffins, and most casseroles where a little extra moisture won’t ruin anything.
For anything where structure matters — cakes, choux, custards — use Option 1 or 2. For everyday cooking, Option 3 is fine.
Step 2: Know What Doesn’t Scale at 1.5x
Bulk ingredients scale linearly. Potent ones don’t. Here’s the practical breakdown:
- Flour, sugar, milk, stock, meat, vegetables, pasta, rice: full 1.5x. No adjustment needed.
- Salt: start at 1.25x, taste at the end, adjust up. Salt perception is not linear, and a 1.5x pot of soup can taste over-seasoned.
- Chili, cayenne, black pepper: 1.25x to start. Heat concentrates as volume grows.
- Baking powder and baking soda: 1.4x is safer than 1.5x. Over-leavened batter rises fast and collapses.
- Yeast: 1.25x is plenty. The dough will ferment on nearly the same schedule.
- Vanilla, almond extract, and other concentrated flavorings: 1.25x. These get overwhelming quickly.
- Garlic, fresh herbs, citrus zest: full 1.5x or more. Forgiving and usually welcome.
- Wine, brandy, vinegar: 1.25x, since larger volumes reduce proportionally less.
The mental model: if the ingredient is measured in cups, multiply by 1.5. If it’s measured in teaspoons, start at 1.25x and correct by taste.
Step 3: Weigh Instead of Measuring
Scaling by 1.5 is the moment volume measurement starts failing you. Cup fractions compound errors — a slightly heaped ¾ cup, multiplied and re-measured, drifts far enough to change texture.
Convert to grams first, scale, then bake. A cup of all-purpose flour is 120 g, so 1.5 cups is 180 g — a number you can hit exactly on a scale. Step 4: Check Your Pan and Pot
A 1.5x batch needs about 50% more space, and this is where scale-ups quietly fail.
- Stovetop: your pot should be no more than two-thirds full after scaling. If it isn’t, move up a size — an overfilled pot simmers unevenly and takes much longer to reduce.

- Roasting and searing: do not scale the batch size in the pan. Brown meat and sauté aromatics in the same-size batches as the original recipe — just do it more times. Crowding steams instead of searing.
Does Cooking Time Change From 4 to 6 Servings?
Usually less than people expect:
- Soups, stews, sauces: the simmer time stays the same. Only the time to reach a simmer increases, by roughly 5–10 minutes.
- Same-depth bakes in a wider pan: keep the original time, start checking 5 minutes early.
- Deeper bakes in the same footprint: add 15–25% more time and drop the temperature by 25°F (15°C).
- Roasts: timing follows the weight of each individual piece, not the total. A 1.5x quantity of chicken thighs on a bigger sheet pan cooks in nearly the original time.
Never multiply cooking time by 1.5. That’s the fastest way to overcook a scaled-up dinner.
A Worked Example: Pasta Bake, 4 to 6
Original (serves 4): 250 g pasta, 400 g tomatoes, 1 onion, 2 cloves garlic, 1 tsp salt, ½ tsp chili flakes, 150 g cheese, 2 tbsp olive oil.
Scaled to 6:
- 375 g pasta, 600 g tomatoes, 225 g cheese, 3 tbsp olive oil — straight 1.5x
- 1½ onions (use 2 small ones), 3 cloves garlic — straight 1.5x
- 1¼ tsp salt and ⅝ tsp chili flakes to start, adjusted before baking — 1.25x
- Move from an 8×8 to a 9×13 dish
- Bake the same time and temperature; the layer is slightly thinner, so check 5 minutes early
